Spiced cranberry and macadamia rice salad
- 1 tablespoon olive oil
- ½ medium red onion
- ½ teaspoon all spice
- ½ teaspoon ground cumin
- ½ cup chopped macadamia nuts
- ½ cup cranberies diced
- 1 cup cooked rice (white or brown)
- 1 teaspoon grated orange rind
- 1 teaspoon chopped parsley
- 2 teaspoon fresh thyme
- Heat oil in frying pan and cook onion over low heat for 2 minutes
- add nuts, spices and cranberries. Stir as they heat through
- Add cooked rice and oriange rind and parsley and thyme
- Server warm or cold
