Spiced cranberry and macadamia rice salad
 
 
Ingredients
  • 1 tablespoon olive oil
  • ½ medium red onion
  • ½ teaspoon all spice
  • ½ teaspoon ground cumin
  • ½ cup chopped macadamia nuts
  • ½ cup cranberies diced
  • 1 cup cooked rice (white or brown)
  • 1 teaspoon grated orange rind
  • 1 teaspoon chopped parsley
  • 2 teaspoon fresh thyme
Method
  1. Heat oil in frying pan and cook onion over low heat for 2 minutes
  2. add nuts, spices and cranberries. Stir as they heat through
  3. Add cooked rice and oriange rind and parsley and thyme
  4. Server warm or cold
