Smashed roast potatoes

Serves: 4
- 1 kg baby potatoes washed with skin on
- 1 tsp coriander seeds
- sea salt
- 2 tablespoons extra virgin olive oil
- Prick the potatoes with a fork
- Place in microwave ovenproof dish with a lid and microwave on high for 10-12 minutes
- Put olive oil in baking pan and place in 220C oven until hot
- Add the potatoes and turn on the hot olive oil to coat.
- Press down on each potato with a potato masher until squashed
- Sprinkle over coriander seeds and salt to taste
- Bake 45-55 mins until potatoes are crisp
